Requirements
The ideal candidate will have a minimum of 3-5 years of relevant food and beverage service experience, with previous experience as a Head Waiter, Senior Waiter, Chef de Rang, or Restaurant Captain. Experience in a luxury, fine-dining, or high-volume standalone restaurant is required, and Italian, seafood, or Mediterranean restaurant experience is preferred. Strong knowledge of fine-dining service standards and basic wine pairing is essential, along with previous experience supervising and training a service team.

SHG operates 111 properties across 26 countries, committed to delivering authentic and diverse hospitality experiences that bring people together around the world.We are seeking an experienced and service-driven Head Waiter to join the front-of-house team at L'Amo Bistrò del Mare, our upscale Italian seafood restaurant located at Dubai Harbour Yacht Club.The Head Waiter will lead the assigned section, support the daily service operation and ensure guests receive polished, attentive and personalized service.Key ResponsibilitiesLead and supervise service within the assigned section.Ensure guests receive professional, attentive and personalized service.Present the menu and provide knowledgeable food and beverage recommendations.Coordinate with the kitchen, bar, sommelier and reception teams during service.Monitor table progression and maintain service quality and timing.Train and support waiters and commis waiters.Handle guest requests, dietary requirements and complaints professionally.Support upselling, opening and closing duties, and general restaurant operations.Ideal CandidateMinimum of 3–5 years of relevant food and beverage service experience.Previous experience as a Head Waiter, Senior Waiter, Chef de Rang or Restaurant Captain.Experience within a luxury, fine-dining or high-volume standalone restaurant.Italian, seafood or Mediterranean restaurant experience is preferred.Strong knowledge of fine-dining service standards and basic wine pairing.Previous experience supervising and training a service team.Excellent communication, grooming and guest-engagement skills.Previous UAE or GCC experience would be an advantage.
