Job description
Rixos Premium Dubai is looking for a talented and experienced Specialty Chef – Sushi to join our culinary team. The ideal candidate will have strong expertise in Japanese and Asian cuisine, with a particular focus on sushi preparation, presentation, and quality.
Prepare and present a wide variety of high-quality sushi, sashimi, maki, nigiri, and other Japanese specialties in accordance with established recipes and standards.
Ensure the highest standards of food quality, freshness, taste, presentation, and consistency.
Select, inspect, and properly handle fresh fish, seafood, rice, and other sushi ingredients.
Maintain excellent knife skills and demonstrate proper sushi preparation and cutting techniques.
Follow all food safety, hygiene, sanitation, and HACCP standards at all times.
Ensure proper storage, handling, labeling, and rotation of food products to minimize waste.
Maintain cleanliness and organization of the sushi preparation area, equipment, and workstations.
Assist in menu development and contribute creative ideas for new sushi dishes and presentations.
Monitor food costs and minimize wastage while maintaining the required quality standards.
Work closely with the Sous Chef, Executive Chef, and culinary team to ensure smooth daily operations.
Support the training and development of junior culinary team members in sushi preparation and Japanese cuisine techniques.
Ensure all dishes are prepared and served according to the hotel's quality and presentation standards.
Maintain a professional and positive approach while working in a fast-paced, multicultural environment.
Perform other culinary duties as assigned by the Chef or management.
Qualifications
Minimum 2–3 years of relevant experience in Japanese/Asian cuisine, with strong specialization in sushi.
Proven experience as a Sushi Chef, Specialty Chef – Sushi, or a similar role in a luxury hotel, resort, or high-end restaurant.
Strong knowledge of Japanese culinary techniques, sushi preparation, and presentation.

Ability to work efficiently under pressure in a high-volume kitchen environment.
Creative, detail-oriented, and passionate about Japanese cuisine.

Ability to work flexible shifts, including weekends and public holidays.
International hotel or luxury hospitality experience is highly preferred.
